MMMMmmmmm... Blueberry panckakes! I decided I'm going to blog about some tasty treats that I have enjoyed lately. See, I try to take my knowledge of balanced, healthy diets, and try to play around so I can enjoy my look AND some tasty treats!! The hot cakes were made quite a few weekends ago. I had been dying for some blueberry pancakes, and naturally, I have my own favorite recipe!! Wheat flower, applesauce, blueberries (sometimes chopped fresh apple), egg, baking soda, cinnamon, Splenda.... I learned this recipe from the BFL website during my first adventures in trying to get in shape. Granted, it isn't the CLEANEST meal, but at least I know exactly what goes into it, and all ingredients are Jessica-approved. :) Of course, I couldn't eat a pancake without my egg whites + one egg cooked over medium:

As you already know, I finally tried spaghetti squash, and have been obsessed ever since! This girl will eat just about anything that she can throw some good ole marinara onto! Check out this tasty treat:
You can't see it, but there is spaghetti squash hiding underneath the massive load of broccoli, mushrooms, and sundried tomato basil chicken sausages from Sam's Club. The sausages come with 4.5g of fat, which is GREAT for a sausage. I am totally willing to modify my food for the day to eat one of those bad boys! Oh, let's not forget the marinara!!!
The next day, my lunch looked like this:
What's that, you say? Spaghetti squash without marinara? Well, along with spaghetti squash, I have also discovered Laughing Cow cheese wedges. I've seen the advertisements and spotted the cheese wheels at the grocery store, but assumed it would be nasty or unworthy of the price. You know assume makes and a$$ out of u not me what assume means... My fridge is now regularly stocked with light swiss, garlic & herb, and french onion. Laughing cow is actually coming out with 3 new flavors, I think in June!! Sundried tomato, blue cheese, and something else that I can't remember that sounds absolutely delicious. Can't wait. OK, back to spaghetti squash foods I've been lovin'... Here's my squash and laughing cow stirred up and topped with a few black olives:
Hm... Maybe I should have title this post as "My Sad Obsession with Spaghetti Squash"...
You know you love seeing the simple addition worksheet in the background!! That's touch math (see the dots on the numbers?). The kids say the name of the bigger number, then continue to count the dots on the smaller number to find the sum... Works like magic, and they learn their addition facts much quicker!!
Ok, I have another great food to post, but it's going to be in Foodz I Luvs (Part II), because I have to go battle my nemesis, AKA pot roast. You read that right. Details later...

Ok! OMG! DROOLING OVER HERE and it's all decently healthy and half diet friendly! OMG I AM SO LAZY!!! BOO!! someone get me out of this diet slump! Same thing every day just b/c i suck!
Uhm, yeah, I totally still catch myself using touch math when adding... Oooh. Math degree #FAIL!.
FOOD LOOKS DELISH!! I wish spaghetti squash was on sale all year round! And, I want those hot cakes. nomnomnom
